teff pancakes with strawberries & mint

These pancakes are one of my favorite ways to make use of the abundance of fresh strawberries in summer.

Since these pancakes from my book "With a Pinch of Yoga" themselves aren’t sweet, it's best to add lots of ripe, juicy, sweet strawberries on top. If strawberries aren’t in season, use ripe pears, peaches or hey - go crazy and drizzle them with some homemade date syrup. 

2 tbs chia seeds
⅓ cup water

Put chia seeds together with the water in a bowl and let sit for ten minutes. 

1 cup teff flour
the soaked chia seeds
1 tsp baking powder
½ tsp vanilla
¼ or less salt
1 ½ cup water
1 tbs coconut oil
lots of strawberries (at least ten large ones)
fresh mint

Combine the flour, soaked chia seeds, baking powder, vanilla and salt in a bowl. Mix in the water until smooth. 

Heat the coconut oil in a frying pan over medium high heat. Pour or scoop the batter into the pan, using approximately ¼ cup for each pancake. Brown on both sides. 

Top with plenty of strawberries and some fresh mint.
