sweet & spicy roots

A heartwarming and nourishing soup. Love in a bowl.

This soup from my book "With a Pinch of Yoga" will help to lower vata, to create solid roots, to soothe your nervous system and to warm you up from the inside out.

8 medium carrots
1 small – medium pumpkin
3 medium sweet potatoes
2 – 5 cm fresh ginger
1 chili pepper, seeds removed
½ cup finely chopped lemongrass
1 tbs turmeric
1 tbs Celtic sea salt 
½ tsp cinnamon
water
1 can coconut milk (about 1 ½ cup)
fresh coriander

Chop all veggies, roughly. Throw in a large pan. Add ginger, chopped chili pepper, lemongrass, turmeric, salt, cinnamon and enough water to cover the veggies. 
Bring to a boil. Lower the heat and let simmer until veggies are tender. Add the coconut milk. 
Using an immersion blender, blend until smooth. 
Serve in cute bowls, topped with fresh coriander.
