chai

A creamy and comforting drink to enjoy all day, all year. 

The chai spice mix makes a perfect gift for birthdays or holidays. Put it in a pretty jar, make a cute label and give to a loved one. 

To make this chai from my book "With a Pinch of Yoga" for yourself or someone you love, you need to make the chai spice mix first. 

⅓ cup cinnamon chips (you can use about 5 cinnamon sticks instead)
¼ cup cardamom pods
¼ cup anise seeds
¼ cup coriander seeds
2 tbs black peppercorns
1 ½ tbs whole cloves
1 tbs fennel seeds

Combine all spices in a jar. 

To make the chai, bring 

2 cups water 

to a boil. Put 

1 tbs chai spice mix 
1 – 3 cm fresh ginger

in a tea sieve. Put the sieve in the boiling water. 
Lower the heat and let simmer for 10 minutes. Towards the end of the 10 minutes, add 

½ cup homemade nut milk (strained almond or hazelnut works really well)

and let simmer until nut milk is warm.
Remove the sieve (careful, it will be hot). Pour chai in a mug.
